I'm not sure what to do with myself,I have had the pass three days off which is very rare.I have been catching up on lots of couch time and doing nothing...Its great and horrible at the same time.Eating lots of sushi and wasabi peas.....Listening to some old records this morning and its amazing how it brings back certain memories...For myself its a bit of a documentation of my life......right now listening to Karate "In Place of Real Insight" haven't heard that in ages still pretty great.....

Ok tell me if I am showing off...Don put this one together....sashimi of tuna miso pear salad and flying fish eggs....Looks and was awesome on the tongue 

All I can say is genius! 

Another bit of fun that came out of my little culinary cranium.....Buffalo carpaccio,beet and horseradish salad...nice salts and cracked peppercorns....I must say it was pretty damm good.

A little amuse bouche I slapped together for the restaurant....A little sweet basil crab,green curry mousse.and a touch of mirco amaranth....down with crab!!!!!!!!! 

A little tired after a long service on New Years Eve....But what you can't see is the champagne that I am enjoying sipping...At least at the end of the night! 

Got a new coat...it been so damm cold this past week. 

Well I recieved a new cut...Steff is in hair school at Paul Mitchell right now so I get to be her experiments....She straightened my hair on Saturday...Never had it before,but I like it...And just wanted to show off our Sushi shower curtain it rocks!

There is new blood flowing in the Grease Trap

The new year has brought new blood to the restaurant....IE we got a new chef...Antonio Bombaci from Spain...And damm can this guy cook.His cusine thus far is impressive and inovative....I am really enjoying my days....This guy has an interesting palate....We did a Pear soup with Roqufort Ice Cream and a Anise vin...Wow it was good and his braise oxtail with celery puree and roasted pine nut praline..Anyway for all my friends that don't live in Dallas you are missing out..and for the ones that do come by an experience this guys food....It will create waves in this city I think....

Gosh those were the days....A little Tennis at 10 am...A martini at 10:30...My 280Z and little spanish fly..

Let me tell you "She's got the Groove" I had to drag her out of Marks house...AKA the best damm house to dance,listen to music,and drink at in Dallas...It was hard but I lured her with cheap Mexican beer
