There is new blood flowing in the Grease Trap

The new year has brought new blood to the restaurant....IE we got a new chef...Antonio Bombaci from Spain...And damm can this guy cook.His cusine thus far is impressive and inovative....I am really enjoying my days....This guy has an interesting palate....We did a Pear soup with Roqufort Ice Cream and a Anise vin...Wow it was good and his braise oxtail with celery puree and roasted pine nut praline..Anyway for all my friends that don't live in Dallas you are missing out..and for the ones that do come by an experience this guys food....It will create waves in this city I think....
